{Mostly} Local Granola

I’ve been feeling A LOT better…just still have the dengue rash. I’m so glad that it wasn’t a worse case. 

Granola

8 cups rolled oats
1 cup wheat germ
1 cup chopped kenari (Java almond) nuts
2 cups coconut
1 1/2 teaspoons salt
1 c palm sugar
1/2 cup local honey
1 cup coconut oil
1 Tablespoon ground cinnamon
1 Tablespoon vanilla extract

Directions
1. Preheat the oven to 165 degrees C (325 degrees F). Grease three medium size baking sheets.
2. Combine the oats, wheat germ, and nuts in a large bowl. Sir together the salt, brown sugar, honey, oil, cinnamon and vanilla in a saucepan. Bring to a boil over medium heat, then pour over the dry ingredients, and stir to coat. Spread the mixture out evenly on the baking sheets.
3. Bake in the preheated oven until crispy and toasty (about 20 minutes). Stir once halfway thorugh. Cool. 
4. Optional: You can add peanuts or walnuts if you want. You can also add raisins or cranberries,  but add them after its done cooking. Also this isn’t a very sweet granola so you could also add 1/4 maple syrup.
